Pasta Frola (Pie)

Ingredients

  • Self rising flour 7 oz
  • room temperature unsalted butter 8 tbsp (1 stick)
  • lemon zest 1/2 tsp
  • sugar 1/2 cup
  • eggs 1
  • egg yolk 1
  • vanilla extract 1 tsp
  • guava paste 1 cup
  • water 1/2 cup

Preparation

In a microwave safe container put the guava paste with the water and microwave for 30 seconds. Using a fork, mix it until smooth. Reserve.

In a large bowl beat the butter with sugar.

Add the egg yolk, egg, lemon zest and vanilla extract. Continue beating until smooth.

Add flour and mix the dough with a spatula. Do not over mix, just incorporate the ingredients.

cover the bowl with a plastic wrap and put it in the fridge for 30 minutes.

Pre heat the oven to 350 degrees.

Apply oil spray to a 9″ round springform pan.

Divide the dough in two parts: 3/4 for the bottom of the pie, and 1/4 for the stripes. You can add 1 tbsp to the 1/4 part of dough to facilitate assembling.

On a floured surface make a round shape with the dough, large enough to cover the bottom and 1 inch sides.

Cover the dough with guava paste.

Make rolls with the remaining dough and design your own top, I usually make the easiest square design.

Bake the pie for 25 minutes.

Let it cool and enjoy with your cup of tea, coffee, or use it in your next brunch to surprise your guests.
