Flatbread with thyme

Ingredients

  • All Purpose Flour or bread flour: 1 cup, and extra for kneading
  • Salt: 1/4 tsp.
  • Active Dry Yeast: 1/2 tsp.
  • Olive oil: 1 tsp, and extra to drizzle flatbread once it is cooked.
  • Lukewarm water: as needed, about 1/2 cup.
  • Coarse sea salt: 1/2 tsp.

Preparation

I use my kitchen aid stand mixer to prepare the dough, and then use my hands to finish the process.

Put flour, salt, yeast, and olive oil in a stand mixer bowl, using the hook attachment.

Add water and turn on the mixer (slow speed). You may need more or less water, until you get a soft dough.

Remove the dough from the mixer and continue kneading with your hands, on a cleaned and lightly floured surface.

Place the dough in a greased  bowl (olive oil is perfect!). Cover with a kitchen towel.

Let the dough rest and rise until it doubles in bulk (about 45 minutes to 1 hour, depending on the room temperature).

Divide the dough in 2 parts, and using a rolling pin, form 2 flat breads (irregular shape is ok).

Place the breads on greased oven sheets.

Bake flatbread at 450 degrees F until the surface is turning golden.

Remove from oven, drizzle with olive oil, and add coarse sea salt and fresh thyme.

Enjoy with your favorite cheese!
