Eggplant Hummus

Ingredients
- Eggplant: 1
- Olive Oil: 1/4 cup
- Garlic: 2 cloves
- Fresh herbs: 1 spring (fresh oregano, thyme or rosemary)
- Salt: 1/2 tsp
- Pepper: as much as you like!
Preparation
Cut the eggplant lengthwise and make some cuts on the surface. Place eggplant halves and garlic cloves with skin on a bake dish. Season it with salt, pepper, a little bit of the olive oil, and fresh herbs.
Bake the eggplant for 40 minutes at 350 degrees F.
Remove garlic and eggplant skin.
Place the pulp in a food processor with the garlic cloves. Process eggplant until you have a pureed texture, adding the olive oil little by little.
Taste and adjust salt and pepper.
You can serve this dip with vegetables (carrots or zucchini), or with your favorite chips.
