Baked eggplant

Ingredients

  • Eggplant: 1
  • Olive oil: 2 tbsp
  • Salt
  • Pepper
  • Fresh thyme

Preparation

Preheat oven to 375 degrees F

Cut the eggplant lengthwise and place the 2 half in an oven dish

Make diagonal cuts on the surface of eggplant

Drizzle cut sides of the eggplant with olive oil, and sprinkle them with salt and pepper

Add fresh thyme on the top

Bake eggplant for 40 minutes, or until the surface of eggplant is dark/brown

Serve as side dish, or you can use it to prepare eggplant hummus.
