Ingredients
For the dough:
- You can use store bought dough (Goya works fine), or you can prepare homemade turnovers’ dough.
For the filling:
- Medium yellow onion: 2
- Ground beef 20 percent fat: 1 1/2 lb
- Olive oil: 2 tbsp
- Salt: 1/2 tsp
- Pepper: 1/2 tsp
- Smoked paprika: 1/2 tsp
- Cumin: 1/2 tsp
- Whole cloves: 2
- Boiled eggs: 3
Preparation
There are many recipes to prepare Argentinian empanadas, each person has his or her recipe. My family loves this one, so I’ll share with you.
In a large pan put olive oil, chopped onions, and ground beef all together. (YES! all together)
Add whole cloves, cumin, salt and pepper.
Use a wooden spoon to cook, mixing all ingredients.
Keep mixing until you notice that the meat has turned brown and doesn’t have any pink part.
Add smoked paprika, and taste. You may want to add more salt and pepper.
Cut the boiled eggs in small pieces and add them to the beef mixture when it is warm.
Fill the dough discs with one tbsp of the filling. Seal the dough using a fork to press down, or doing a little fold on the edge.
Brush the top surface of the dough with one egg yolk if you want a bright color, but it’s not necessary.
I always make 2 little holes on the top side. The holes helps to prevent the empanadas to pop!
Bake the empanadas at 350 degrees F, until the surface is golden.
Let them rest for 20 minutes, and ENJOY!
