Ingredients
- Fresh basil: 2 cups
- Garlic: 4 cloves
- Pine nuts: 1/4 cup
- Parmigiano cheese: 1/2 cup
- Olive oil: 1/2 cup
- Salt: 1 tsp
- Pepper: 1/4 tsp
Preparation
You can use a food processor, a blender, or a mortar and pestle to prepare pesto.
If you are using the mortar and pestle, you need to add garlic and salt into the mortar and start to grind until you have a paste.
Add the pine nuts and continue crushing (I like the crunchy texture of the pesto, so I do not make pine nuts pureed).
Add fresh basil leaves and crush them with a pestle by pounding against the mortar.
Add the parmigiano cheese. At this step I do not use the pestle any more because I like the pesto with some texture. Using an spatula, incorporate all the ingredients. Start adding the olive oil little by little. Add ground pepper.
If using a food processor or blender, just add garlic, basil, pine nuts, salt and pepper. Turn on your machine for few seconds and start adding the olive oil little by little. and last, you incorporate the parmigiano cheese.
If you are vegan, do not use parmigiano cheese, it will taste great!
Serve this pesto sauce with your favorite pasta.
