Ingredients
Home made marinara sauce: 3 cups
Fresh eggs: 4
Fresh herbs: chopped basil, rosemary, oregano
Olive oil to drizzle
Baguette
Preparation
Preheat the oven to 375 degrees.
In an ovenproof cast iron skillet, pour the marinara sauce and bring it to simmer.
Crack eggs (one at the time) into a cup, and slip them into the marinara sauce.
Add salt and pepper only to the eggs (the tomatoes sauce is already seasoned).
Transfer the skillet to the oven and bake it for 10 minutes. The egg whites need to be fully cooked, but the egg yolks have to be runny.
Serve the eggs in the same skillet, garnish with fresh herbs and drizzle with some olive oil.
You can prepare toasts from baguette or your favorite bread to scoop and enjoy!
